Description

A simple and flavorful side dish made with golden chanterelle mushrooms, garlic, thyme, and butter. Ready in under 20 minutes and perfect with steak, pasta, or crusty bread.


Ingredients

  • 8 ounces chanterelle mushrooms
  • 3/4 teaspoon kosher salt (plus more to taste)
  • 2 tablespoons butter
  • 3 cloves garlic, sliced
  • 1 tablespoon fresh thyme
  • 1/4 teaspoon black pepper

Instructions

  1. Rinse chanterelles briefly under cool water to remove dirt, then pat dry and cut into similar-sized pieces.
  2. Heat a large skillet over medium-high heat. Spread mushrooms in an even layer, sprinkle with salt, and cook, stirring often, for 5–10 minutes until liquid evaporates.
  3. Reduce heat to medium-low. Add butter, garlic, and thyme. Cook for another 5 minutes until mushrooms are golden and fragrant.
  4. Season with black pepper and adjust salt to taste. Serve warm.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently in a skillet. Add a splash of white wine, cream, or Parmesan for variations.
