- 4 cups apricot nectar (or peach nectar)
- 3 cups apple cider (not apple juice)
- 1 cup pumpkin puree (100% pure pumpkin, not pie filling)
- 1/4 cup brown sugar
- 2 teaspoons vanilla extract
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon salt
Instructions
- Set up: Place your blender on the counter (or use a stick blender with a large container).
- Add ingredients: Measure all the ingredients into the blender jar. Blend on high for 30–60 seconds until the brown sugar has dissolved.
- Serve: Pour the juice into a large pitcher. Chill until ready to serve, or pour over ice immediately. Stir or shake before serving if made ahead.
Notes
Storage: Keep pumpkin juice in a sealed container in the fridge for up to 1 week. Stir or shake before pouring. Variations: Blend with ice for a frosty drink, add dark spiced rum for a cocktail, or gently warm on the stovetop for a cozy version.
