Description
A sweet, no-bake holiday tradition made with layers of chocolate wafer cookies and whipped cream that transform into a stunning striped log after chilling.
Ingredients
Scale
- 1 pint whipping cream
- 2 tablespoons confectioner’s sugar
- 1 package famous chocolate wafer cookies
- 2 tablespoons cocoa powder (optional, for dusting)
Instructions
- Place whipping cream and sugar in a large bowl. Using a hand mixer, whip for 2 minutes on medium speed, then switch to high speed until thick and creamy.
- Spread about 1 tablespoon of whipped cream on top of a cookie, then press another cookie on top. Continue stacking until you have stacks of 8 cookies with cream.
- On a large platter, spread a thin line of whipped cream in the shape of a log to anchor it. Place about three-quarters of the stacks on their side to form the log. Use whipped cream to glue the remaining stacks onto the side.
- Spread the remaining whipped cream over the log, leaving the ends exposed to show the cookie layers. Dust with cocoa powder if desired.
- Cover loosely and chill in the freezer for at least 2 hours or overnight.
- Slice diagonally to reveal the striped layers and serve chilled.
Notes
Use very cold cream for best results. A serrated knife makes cleaner slices. If making ahead, let it soften at room temperature for 10 minutes before serving. Variations: add crushed candy canes for a peppermint twist, fresh raspberries for contrast, or use gluten-free cookies.
