Description
A colorful Italian dessert made by layering chocolate, cherry, and pistachio ice cream into a loaf pan. No ice cream maker needed—just a few pints and a little freezer time for a show-stopping summer treat.

- 1 pint chocolate ice cream
- 1 pint cherry ice cream
- 1 pint pistachio ice cream
- 1 cup whipped cream (optional)
- Toppings: slivered almonds, chopped pistachios, shaved chocolate, maraschino cherries
Instructions
- Line a loaf pan with parchment paper, covering the bottom and all sides.
- Let chocolate ice cream soften for 10–15 minutes, then spread it into an even layer in the pan. Freeze for 30 minutes.
- Spread softened cherry ice cream over the chocolate layer. Freeze again for 30 minutes.
- Top with pistachio ice cream, smoothing it evenly.
- Optional: spread a layer of whipped cream on top and sprinkle with nuts or shaved chocolate.
- Cover with plastic wrap and freeze for at least 8 hours, or overnight, until solid.
- Lift spumoni from the pan using the parchment. Slice into thick pieces with a warm sharp knife.
- Serve with a dollop of whipped cream and a cherry on top.
Notes
Use high-quality ice cream for the best taste. For clean layers, freeze each layer for 30 minutes before adding the next. Store wrapped in parchment and plastic wrap for up to 3 months with store-bought ice cream, or 1 month with homemade.
