Ever had one of those nights when you just need dinner on the table-fast-but still want it to feel fun? That's where these pizza burgers come in. They're the perfect mix of two comfort foods, done in about 30 minutes, and my kids practically cheer when they see them coming out of the oven.
These are totally weeknight-friendly and easy to tweak. I used vegan ground beef and vegan mozzarella for this version, but you could swap in regular if that's what you have. It's a recipe that really works both ways.

Oh-and if you're a fan of quick dinners like this, you should definitely check out my black bean burger recipe that comes together in less than 20 minutes.
Ingredients you'll need
- 10 oz vegan ground beef
- 2 tablespoon olive oil
- ⅓ cup onions, chopped
- 3 cloves garlic, pressed
- 2 teaspoon Italian herbs
- 4 hamburger buns
- 8 oz pizza sauce
- ½ cup vegan mozzarella
- salt and pepper, to taste
Step-by-step instructions
Cook the filling
Preheat your oven to 420°F and line a baking sheet with parchment paper.
Heat olive oil in a pan over medium heat. Add the onions and cook for about 2 minutes, just until they start to soften. Stir in the vegan ground beef and garlic. Let it cook for another 3 minutes, breaking up the "meat" as it browns.
Add sauce and seasonings
Pour in the pizza sauce and sprinkle in the Italian herbs. Season with a little salt and pepper. Give everything a good stir and let it simmer for 2 more minutes.
Assemble the pizza burgers
Slice the hamburger buns in half and arrange them open-faced on your prepared baking sheet. Spoon the meat sauce onto each half, then top with shredded vegan mozzarella.
Bake until melty
Bake for about 10 minutes, or until the cheese has melted and everything is bubbling hot. Serve right away and enjoy!

Notes and tips
- Freezing: wrap cooled pizza burgers in cling wrap, then place in freezer bags. Store individually or in batches.
- Storage: leftovers keep well in the fridge for up to 3 days.
- Reheating: pop them back in the oven at 350°F until warmed through, or use the microwave if you're short on time.
- Make-ahead: you can prep the sauce 2 days in advance and assemble when ready.
Serving ideas
These pizza burgers are pretty hearty on their own, but I usually add a simple green salad or some roasted veggies on the side. Garlic parmesan fries are another fun option if you want it to feel like a real "Friday night" meal.
FAQ
It's a cross between a burger and pizza-basically an open-faced burger topped with pizza sauce, cheese, and seasonings, then baked until melty.
Yes! This recipe is already vegan, but you can also use regular ground beef and mozzarella if you prefer.
Sure-skip the buns and use roasted portobello mushrooms as your base instead.
About 30 minutes, start to finish.
